Matoke, Ngwachi

Sweet Potatoes In Peanut Sauce

Ingredients
  • Sweet potatoes
  • Garlic
  • Seasoning
  • Peanut powder
  • Vegetable stock
  • Cooking oil
  • Onions
  • Coriander leaves
Method
Boil sweet potatoes [ngwachi] in water till cooked
  1. In a large pan add oil and heat.
  2. Add chopped onions and cook till tender.
  3. Add chopped bell peppers and cook for about 2-3 minutes and remove from heat
  4. In a different pan add onions and cook till tender
  5. Add seasoning and a little water and cook the bananas till ready
  6. Add concasse[tomato paste] and stir constantly to prevent the sauce from sticking on the pot
  7. Add turmeric and cumin powder.
  8. Add vegetable broth and let it boil.
  9. Add peanut powder and let it thicken
  10. And all the sauce to a blender
  11. Blend to your preferred
  12. Mash the matoke
  13. Serve matoke with the peanut sauce.
  14. Enjoy

Matoke in Peanut Sauce

Ingredients
  • Green bananas
  • Chopped red onions
  • Chopped red peppers
  • onions
  • Ripe tomatoes
  • Dhania
  • Cooking oil
  • Salt
  • Curry powder
  • Turmeric
  • Cumin powder
  • Peanut powder
Method
  1. In a bowl combine the cornstarch
  2. Stir in peanut powder
  3. In a pan, stir fry marinated beef pepper until the beef is cooked
  4. Remove from fire and let it cool
  5. Add oil to a heated pan and heat
  6. Add onions , carrots and stir fry until tender
  7. Add garlic and let it cook for one minute
  8. Stir in the peanut powder and let boil
  9. Return beef mixture to the pan
  10. Serve with any accompaniment [rice, matoke, mash potatoes, ugali etc.]

Matoke With Peanut Sauce

  • Cooking oil
  • Salt
  • Curry powder
  • Turmeric
  • Cumin powder
  • Peanut powder

  7. Add vegetable broth and let it boil.
  8. Add peanut powder.
  9. Correct seasoning.
